Hydroxytyrosol is a polyphenolic compound mainly found in olive fruits, branches and leaves, which has strong antioxidant activity. Its molecular structure, together with other phenolic substances, has a phenolic hydroxyl group, and also has an alcohol hydroxyl group on the ethanol chain connecting the benzene ring.
