What is the main function of hydroxytyrosol?

Hydroxytyrosol, also known as 3, 4-dihydroxyphenyl ethanol, is a natural product of polyphenols, found in the structure of plant secondary metabolites such as olivorin. The leaves and fruits of olive oil are rich in hydroxytyrosol, which is a substance with strong antioxidant properties and free radical scavenging ability, widely used in medicine, food, cosmetics, and other fields.

Hydroxy tyrosol can be obtained by enzymolysis or acid-catalyzed hydrolysis, or from olive oil waste. There are also several synthetic methods available, such as the chemical, biocatalytic conversion of tyrosol and benzol into hydroxy tyrosol, but this method is mainly used in the laboratory to produce hydroxy tyrosol in small quantities. Can not meet the needs of industrial production.

The preparation method of hydroxyl tyrosol, which has low cost, simple process, easy access to raw materials, and is suitable for large-scale production, needs to be studied and verified by many parties and will be promoted in case of demand.
